Add the shredded vegetables and allow them to cook down, as the water sweats out and they reduce in volume for about 5 minutes. Add the wine, reduce the heat and allow to simmer longer (approximately 7-10 minutes), until almost all of the liquid is gone.⠀⠀ While the vegetables are cooking, place the walnuts, Italian seasonings and sea salt into the food processor and grind into a course meal, taking care not to over grind, as a paste will form.⠀⠀ Add the walnuts to the skillet and stir.⠀⠀ Add the marinara sauce and stir to combine. Simmer on medium-low heat for another 10 minutes, stirring occasionally.⠀⠀ Serve on top of whole wheat spaghetti, zucchini noodles, spaghetti squash or your favorite pasta and enjoy!⠀⠀
So excited to say that I have started cooking healthier meals from scratch and I am eating less and less processed junk every day and my family is slowly but surely following. My husband is a junk food junky and while I love the fact that he ‘loves me just the way you are’, sometimes I wish he would say, ‘lose some weight tubby’. No, not really. That would break my heart! I just need more motivation!!
Adam thank you for the feedback. I will certainly switch to cream and see if that helps and maybe eliminate the wine. I have been using that as a “treat” at night. It is a dry red-pinor noir. Dinner is usually fish, chicken or pork with veggies. I do not always eat beans or lentils with dinner but work them in when I can. It is a challenge to cook for myself and then my husband and kids.
Hi Karen! I haven’t dealt with chronic pain and fatigue myself, so my experience is pretty limited in that area. I would encourage you to move however you can without overdoing it. Exercising without rest can impact our levels of the steroid hormone cortisol and cause an increase of stubborn fat stored in the belly. In this study, women were put in one of two groups. Group 1 ate a “normal” diet with 15% of calories from protein. Group 2 ate a high-protein (30%) diet, with a special emphasis on low-glycemic-index foods. Both groups lost weight, but the Group 2 also had impressive hormonal improvements, specifically a decrease in androgens (male sex hormones) and markers of inflammation, and an improvement in insulin sensitivity. It’s complicated because there were two interventions at once (the protein and the glycemic index), but this seems to suggest that getting enough protein is important for hormonal healing.

Just like electrolyte balance needs to be maintained, the amount of sodium in our body also needs to be regulated to keep our blood pressure at just the right spot: Too high and it can increase our risk for heart disease, too low and we can feel faint since oxygen isn’t getting to our cells quickly enough.
